İsra Toptancı is a part-time lecturer in the Department of Food Engineering at Uskudar University. Holding a Ph.D. from Ankara University (2013), she specializes in food contaminants, safety, and analytical chemistry, with a focus on phthalates, bisphenols, and polyphenolic compounds.
- Tokat Gaziosmanpaşa University (BSc, Food Engineering, 2000)
- Ankara University (MSc, Food Engineering, 2005)
- Ankara University (Ph.D., Food Engineering, 2013)
Her research spans phthalate migration in oils, bisphenol compounds in canned foods, and PAH analysis in honey, alongside pesticide residue monitoring and antioxidant evaluation. She employs advanced techniques like GC/MS/MS and QuEChERS for contaminant detection.
Recent publications highlight her work on non-stick cookware safety, light-induced oil degradation, and the chemical stability of oil blends. While her h-index is 8, her 2024 study on Siirt propolis demonstrates growing impact in functional food research.
