Magdalena KARAMAĆ serves as an Assistant Professor at the Institute of Animal Reproduction and Food Research of the Polish Academy of Sciences in Olsztyn, Poland, working within the Chemical and Physical Properties of Food Scientific Group. Her research focuses on plant-based food analysis with particular emphasis on phenolic compounds and antioxidant properties across various crops and growth stages. Dr. KARAMAĆ's research interests span food chemistry, phenolic compound analysis, antioxidant properties of plant extracts, and nutritional science. Her work demonstrates a consistent focus on how growth stages, processing methods, and plant varieties affect the chemical composition and functional properties of food crops. She has developed expertise in analyzing phenolic profiles across diverse plant species including legumes, grains, oilseeds, and medicinal plants. Analysis of her recent publications reveals a strong concentration on plant phenolics and their antioxidant capacities across different growth stages, varieties, and processing methods. Her research covers a wide range of crops including rapeseed, buckwheat, flax, lentils, alfalfa, sunflower, amaranth, quinoa, and various legumes. She frequently employs extraction techniques to isolate and characterize bioactive compounds, with particular attention to how these compounds function as natural antioxidants. Dr. KARAMAĆ has served as a peer reviewer for prominent journals including Food Research International and Journal of Agricultural and Food Chemistry, demonstrating recognition of her expertise within the scientific community. Her collaborative research approach is evident through numerous co-authorships with scientists like Ryszard Amarowicz, Katarzyna Sulewska, and Michał Adam Janiak. These collaborations span multiple institutions across Poland and internationally, reflecting the interdisciplinary nature of her work in food science and plant biochemistry.
