Yan Huang is an Associate Professor in the Department of Animal Science at the University of Arkansas, affiliated with the Dale Bumpers College of Agricultural, Food and Life Sciences. He holds roles as Director of the Experiment Station (DREX) and is part of the Animal Science division. His research focuses on muscle biology, meat science, and the impact of environmental and dietary factors on animal health. He completed postdoctoral training at Cincinnati Children's Hospital Medical Center, studying Barth syndrome and mitochondrial function, following a Ph.D. in Animal and Veterinary Science from the University of Wyoming and earlier degrees in Animal Science from Dankook University and China Agricultural University.
Research interests include the effects of nutritional interventions (e.g., quercetin, selenium, omega-3 fatty acids) on muscle development, mitochondrial function, and toxicity mitigation. His work addresses cardiotoxicity from fescue endophytes, cadmium exposure, and the role of maternal nutrition in offspring metabolic outcomes. Over 100 peer-reviewed publications reflect his expertise in animal physiology, toxicology, and cellular mechanisms.
Teaching responsibilities include courses in Animal Science, emphasizing practical applications of research to agricultural production and human health. His lab investigates translational solutions for improving livestock health and meat quality, with a focus on nutrient signaling pathways and environmental stressors.
