Vincenzo Cunsolo is an Associate Professor of Organic Chemistry at the University of Catania, Italy, with a focus on proteomic analysis of agro-food and biomedical samples. He serves on the PhD teaching board in Chemical Sciences and multiple quality assurance groups for degree programs in Chemistry.
His research utilizes advanced mass spectrometry (Orbitrap Fusion, Actapure, Typhoon systems) and bioinformatics to characterize protein structures in food (wheat, chickpea, milk), marine organisms, and ancient samples (mammoth remains, historical documents). Current projects include studying post-translational modifications in neurodegenerative disease models and developing proteomic databases like TriMet_DB.
Recent publications highlight proteomic investigations of Podolica cow's milk, antifungal peptides from crayfish, and historical proteomics of Vlad III the Impaler's documents. He supervises doctoral students Aldo Lanzoni and Salvo Laudani, with research collaborations spanning EU projects and regional initiatives.
