Veronica Mullins is an Associate Professor and Director of Nutrition and Human Performance at the University of Arizona's School of Nutritional Sciences and Wellness. A Fellow of the Academy of Nutrition and Dietetics (FAND), she holds a Ph.D. in Nutritional Sciences from UA, with certifications in Strength and Conditioning (CSCS). Her research spans sports nutrition, environmental nutrition, and nutrigenomics.
Professional experience includes team nutritionist for the Arizona Cardinals, Olympic athlete consultation, and curriculum development for courses like NSC 315 (Sports Nutrition) and NSC 425L (Advanced Sports Nutrition Lab). Research publications focus on omega-3 supplementation for brain injury prevention in athletes, neuroimaging biomarkers, and personalized nutrition strategies.
