Prof. Tjakko Abee is an Associate Professor in Food Microbiology at Wageningen University, specializing in microbial stress responses, food safety, and probiotic research. He has supervised 48 PhD students, focusing on pathogenic bacteria such as Listeria monocytogenes, Bacillus cereus, and Campylobacter, as well as beneficial microbes like Bifidobacterium breve and Propionibacterium freudenreichii.
His research explores bacterial behavior in food environments, including biofilm formation, stress adaptation mechanisms, and antimicrobial strategies. Key areas include enhancing food safety through rapid pathogen detection and improving probiotic applications.
Recent work highlights the ecological behavior of pathogens in food processing environments, the role of stress response genes (SigB), and the delivery of nutrients via bacterial extracellular vesicles.
Advising over 48 students, Prof. Abee’s contributions span microbial physiology, food preservation, and biotechnology. His lab focuses on translating fundamental microbial insights into practical solutions for the food industry.
