Therese Fostervold Mathisen is an Associate Professor at the Department of Nursing, Health and Laboratory Science, Høgskolen i Østfold (HiØ). Her research focuses on exercise medicine, eating disorders, public health, and sports nutrition. She leads projects on physical activity in eating disorder treatment, prevention of REDs in athletes, and nutrition literacy in youth sports.
