Susan Bridle

Susan Bridle is an Adjunct Faculty member at the Korbel School of International Studies at the University of Denver. She is a consultant at Healthy Food Strategies, where she bridges research, policy, and practice to advance healthy food access and sustainable food systems. Her work spans global food security, plant-based agriculture, and environmental sustainability.

• USDA-funded initiative to develop institutional markets for plant-based proteins and legume crops
• RWJF-funded analysis of U.S. hospitals' community benefit resources for healthy food access
• Collaboration with schools in Sinaloa, Mexico, on experiential learning for food systems and environmental sustainability
• Authoring a book titled Beans! How to Feed 8+ Billion People on a Scorching Planet

At the University of Denver, she teaches courses on global food and nutrition security and green economy strategies. Her research emphasizes scalable solutions for planetary health through sustainable dietary patterns and agricultural practices.
