Sophie Egan is a food systems expert and academic lecturer at Stanford University's Earth Systems Program. She previously served as Director of Health and Sustainability Leadership at The Culinary Institute of America (CIA), where she collaborated with institutions to improve foodservice practices. She currently co-directs the Menus of Change University Research Collaborative with Stanford. Egan holds an MPH from UC Berkeley and completed Harvard's Sustainability Leadership program. Her research focuses on intersections between food consumption, climate action, and public health.
Education: BA in History & Mathematics (Stanford), MPH in Health & Social Behavior (UC Berkeley), Executive Education in Sustainability Leadership (Harvard).
Research Interests: Egan analyzes how societal values shape dietary choices, with emphasis on sustainability transitions, food system equity, and behavioral drivers of food waste. She advises corporations and governments on climate-conscious menu strategies through her consultancy Full Table Solutions.
Awards: Recognized as one of UC's 30 Under 30 innovators, her book Devoured received multiple accolades including an Amazon Best of the Month award. Her work bridges anthropology, economics, and public policy to address systemic food challenges.
Consulting & Initiatives: Leads The Defining Decade Project (food systems transformation by 2030) and collaborates with major institutions to reform foodservice practices. Her advisory work spans K-12 meal programs, restaurant chains, and university dining systems.
