Shelly J Schmidt

Shelly J Schmidt serves as a Professor in the Department of Food Science and Human Nutrition at the University of Illinois Urbana-Champaign and holds an Affiliate appointment at the Siebel Center for Design. Her research program investigates fundamental physical and chemical properties of food systems with emphasis on industrial applications.

Her primary research domains include:

• Glass transition phenomena in food matrices
• Water mobility and activity relationships
• Confectionery science and sugar chemistry
• Dairy fat structure-function properties
• Nuclear magnetic resonance applications
• Thermal analysis of food materials

Current investigations integrate differential scanning calorimetry, NMR spectroscopy, and sensory methodologies to characterize phase transitions in commercial confections and structural properties of dairy products. This work directly addresses industry challenges in product stability, texture control, and shelf-life prediction across confectionery and dairy sectors.
