Dr. Sarah Ku is an Assistant Professor with a joint appointment in the Quinlan School of Business and the School of Environmental Sustainability at Loyola University Chicago. She joined the university in 2022 as part of her tenure-track position.
Her research focuses on sustainability and equity in business, with a focus on organizational food waste, circular strategies through biomimicry, and innovative uses of insects in sustainable business models. She holds a PhD in Business Administration from Georgia State University (2022) and a BBA in Marketing from the University of West Georgia (2009).

Dr. Ku received the Best Reviewer Award from the Academy of International Business (2018-2020) and is affiliated with the Baumhart Center for Social Enterprise & Responsibility via the Abrams Sustainable Business Challenge initiative.
