Samira Feyzi

Samira Feyzi is an Assistant Professor of Food Science at the University of Arkansas System, affiliated with the Dale Bumpers College of Agricultural, Food and Life Sciences. Her research focuses on protein chemistry and analysis, particularly in plant proteins' modification for food applications. Dr. Feyzi holds degrees from Ferdowsi University of Mashhad, Iran, and conducted postdoctoral work at the University of Minnesota's Plant Protein Innovation Center. She explores plant protein functionality, off-flavor mitigation, and nutritional enhancement through non-thermal and enzymatic methods.

Her work emphasizes developing climate-resilient plant protein sources to address global food demands while maintaining nutritional quality. Feyzi also contributes to teaching food chemistry and analysis courses, aiding in curriculum development for graduate programs in food science.
