Roberto Mazzoli serves as Associate Professor in the Department of Life Sciences and Systems Biology at the University of Turin, where he conducts research at the intersection of biochemistry, microbial metabolism, and sustainable bioprocessing. His academic profile spans teaching, research leadership, and institutional service including roles in curriculum committees and departmental councils.
His primary research focuses on Metabolic Engineering of Prokaryotes and Waste Biomass Conversion, with three core thrusts:
- Food & Nutraceutical Microbiology: Investigating lactic acid bacteria for food fermentation (wine/dairy), biogenic amine production (histamine, tyramine), and nutraceutical synthesis (GABA, selenium metabolites)
- Environmental Biotechnology: Studying aromatic pollutant biodegradation using Acinetobacter radioresistens S13 and plant biomass degradation by cellulolytic bacteria like Clostridium cellulovorans
- Consolidated Bioprocessing: Developing single-step fermentation systems for converting agro-industrial/municipal waste into biofuels (ethanol, butanol, hydrogen) and bioplastics through metabolic engineering and co-cultivation strategies
Dr. Mazzoli leads the Biorefineries, Renewable Biomasses, Metabolic Engineering and Biofuels research group, employing proteomics, enzymology, and fermentation optimization to engineer microbes for sustainable production of high-value compounds. His work bridges fundamental microbial biochemistry with industrial applications in food safety, environmental remediation, and circular bioeconomy.
