Rikke Andersen is a Senior Researcher at the National Food Institute, Technical University of Denmark (DTU), specializing in nutrition science with a focus on technology-driven dietary assessment methods, vitamin D research, and risk-benefit analysis of food. Her work spans human randomized controlled trials, cross-sectional studies, and educational program development targeting children and immigrant populations.
