Dr. Rachel Kopec is an Assistant Professor in the Department of Human Sciences at The Ohio State University’s College of Education and Human Ecology. Her research focuses on fat-soluble compounds (vitamins A, D, E, K, and bioactives like omega-3s, carotenoids, and chlorophylls), exploring their interactions during digestion and their impact on health, particularly in vulnerable groups such as infants, vegetarians, and cancer survivors. The Kopec Lab employs advanced analytical chemistry techniques and multi-omic platforms to address limitations in current tools, such as identifying unknown metabolites and integrating gene-microbiome data. Collaborations across disciplines drive their work.
Research interests include nutrient-nutrient interactions, optimizing nutrient delivery, and reducing disease risk through personalized nutrition strategies. Key projects involve improving iron bioavailability via novel encapsulation methods and studying the metabolic consequences of mammary gland involution on breast cancer risk. The lab is actively seeking motivated students and collaborators.
Dr. Kopec’s work spans nutritional science, biochemistry, and food technology. Her studies on carotenoid bioaccessibility, probiotic effects on gestational outcomes, and LC-MS metabolomics highlight her interdisciplinary approach to advancing nutritional health solutions.
