Ock K. Chun is a Professor in the Department of Nutritional Sciences at the University of Connecticut (UConn). She holds a PhD in Public Health from Seoul National University and has held progressive academic positions at UConn since 2008, including Assistant, Associate, and Full Professor roles. Her research focuses on dietary antioxidants, chronic disease prevention, and community nutrition interventions.
Dr. Chun's research examines: (1) nutritional assessment in high-risk populations, (2) dietary total antioxidant capacity (TAC) as a tool for predicting chronic diseases, (3) human interventions for disease risk reduction, and (4) digital nutrition education in underserved communities. She leads multiple NIH/USDA-funded projects including studies on blackcurrants for cardiovascular health, furocoumarin exposure risks, and wearable antioxidant sensors.

Advising & Grants: She mentors 3 PhD and 1 MS students, with 13 graduates since 2009. Major grants include a $5M Samsung project (2023-2028) for wearable antioxidant sensors, a NIFA grant for digital nutrition literacy (2023-2027), and NIH grants on microbiota-cancer links and estrogenic chemical exposure.
Lab & Affiliations: Directs the Chun Lab (chun.lab.uconn.edu) with active postdoctoral researchers and visiting scientists. Professional roles include former Chair of ASN's Community Nutrition Section and editorial board positions for 15 journals including Nutrients and Journal of the American College of Nutrition.
