Morgan Denzer is an Instructor in the Department of Food Science at the University of Arkansas, affiliated with Dale Bumpers College of Agricultural, Food and Life Sciences. Their research focuses on meat science, high-pressure processing (HPP), and food color chemistry. Denzer holds a B.S. in Food Science from Iowa State University, and M.S. and Ph.D. in Food Science from Oklahoma State University.
Research interests include the effects of HPP on meat quality, nitrite-embedded packaging for color preservation in dark-cutting beef, and sarcoplasmic modeling of protein denaturation. Key publications explore HPP-induced myoglobin changes and enhancement strategies to mitigate persistent pinking in high-pH beef.
No awards or grants are explicitly listed, though work aligns with USDA and industry partnerships. Denzer contributes to the Food Science department’s research initiatives on meat biochemistry and food processing technologies.
