Mercedes Jimenez Rosado is a Professor at the University of León within the Department of Applied Chemistry and Physics, affiliated with the Faculty of Biological and Environmental Sciences and the IQUIMAB research group focused on Chemical, Environmental, and Bioprocess Engineering.

Her research spans bioplastics, controlled release systems, and sustainable material development for both agricultural and biomedical applications. She specializes in protein-based matrices incorporating micronutrients (iron, zinc) for horticultural use, biodegradable packaging from agro-food waste, and biomedical scaffolds using collagen/chitosan hybrids with nanoparticle modifications.
Recent publications demonstrate expertise in reactive extrusion, crosslinking techniques, and characterization of mechanical properties across diverse protein sources (soy, pea, gluten). She explores dual-use applications like magnetic hyperthermia and drug delivery systems, while maintaining focus on eco-friendly synthesis methods and educational innovations in sustainable technologies.
