Matteo Zanoni

Matteo Zanoni is a Research Fellow at the University of Gastronomic Sciences (UNISG) in Pollenzo, Italy, affiliated with the SF4C – School Food for Change project. His work focuses on advancing sustainable and healthy food systems through education.

He holds a Master’s degree in Agri-food Biotechnologies from the University of Verona (2022), with a thesis on dietary fiber applications in ice cream production. Previously, he worked at the Food Technologies laboratory of the University of Verona, specializing in food product development and sensory analysis.

Research priorities include food science, chemical-physical characterization of foods, and innovative product development. His current UNISG role emphasizes systemic change in school food systems through educational initiatives.

Key projects include SF4C, which integrates interdisciplinary approaches to transform food systems. Professional activities are anchored in laboratory research and applied food science.
