Mathias Porsmose Clausen

Mathias Porsmose Clausen is an Associate Professor in the Department of Green Technology at the University of Southern Denmark. He serves as the leader of the SDU FOOD Lab and is actively involved in the LINXS community as a Fellow under the "Food structure and health" theme. His expertise lies in characterizing biomolecular structures in food systems using advanced optical microscopy techniques, image analysis, and physicochemical methods.

His research priorities focus on gastrophysics, particularly analyzing the microstructure and texture of food in gastronomic contexts. This work bridges food science with sensory perception and material physics.

As a member of Food Working Group 5, he contributes to interdisciplinary collaborations in food science and structural biology. His affiliations include advanced imaging initiatives and participation in LINXS educational programs.
