Dr. Mahsa Majzoobi is a Vice-Chancellor's Senior Research Fellow at RMIT University's School of Science. With extensive international experience in plant food products, she focuses on grain chemistry, starch manufacturing, and food waste upcycling. She has published over 130 papers and led multiple industry-funded projects in collaboration with organizations like NSW Department of Primary Industries and CSU.
Her research interests include Food Sciences, Food Technology, Food Chemistry, and Sustainable Food Production. Key areas of focus are starch modification, functional foods, and reducing food waste through innovative processing techniques.
Majzoobi's recent research trends emphasize sustainable approaches in food production, dietary fiber optimization, and developing value-added products from agricultural by-products. She explores novel methods for enhancing food functionality and nutritional value, such as functional starch carriers and plant-based alternatives.
