She teaches Anthropology of Globalization at Master 1 level, Urban Anthropology at Bachelor 2 level (Jean Jaurès University), Religions and Societies at Bachelor 2 level (Sciences Po Toulouse), and Multidisciplinary Approaches to Food at Master 1 level (ISTHIA).
Her research focuses on urban geography, geography of migrations, and social sciences of religions, with particular emphasis on contemporary Jewish worlds, small urban businesses and migrations, food solidarity, and arts and migrations. Her work explores the spatial dimensions of religious practices, urban diversity, and the interplay between migration and commercial spaces in global cities.
Endelstein's publications reveal consistent themes across two decades of research, with recent work focusing on pandemic impacts on urban life and food solidarity, alongside her longstanding interest in Jewish communities in urban settings. Her scholarship demonstrates how commercial spaces serve as sites for cultural expression, community building, and the negotiation of identity in diverse urban environments.
As an active researcher since completing her doctorate in 2008, Endelstein has been a member of LISST since 2011 and the Convergences Migrations Institute since 2018, previously spending 2015-2016 at the Maison Française d'Oxford.
