Lars Ove Dragsted is a Professor and head of section for Preventive and Clinical Nutrition at the Department of Nutrition, Exercise and Sports, University of Copenhagen. He has established himself as a leading researcher in food biomarkers and metabolomics, with a particular focus on developing methods to objectively measure dietary intake and its health effects.
His educational background includes an M.Sc. in Biochemistry (1981) and a Ph.D. in Biochemical Toxicology (1994). His career trajectory shows a steady progression from chemist at the Danish Institute of Occupational Health through various research leadership positions to his current professorship.
Dragsted's research primarily focuses on bioactive compounds in food that can prevent or alter the risk of lifestyle diseases. His work spans from early studies on health effects of fruits, vegetables, and organoselenium compounds to his current emphasis on developing and applying biomarkers for food intake and health effects. He has established an LC-MS based metabolomics platform and an experimental bio-bank that serves as the foundation for his current research.
