Jason Wan is a Professor of Food Science and Nutrition at the Lewis College of Science and Letters, Illinois Institute of Technology (IIT). He also serves as the Associate Director of the Institute for Food Safety and Health (IFSH) and Associate Chair of his department. His research focuses on nonthermal food processing technologies (e.g., HPP, PEF), molecular microbiology for pathogen detection, and functional dairy ingredients. He holds a Ph.D. from Deakin University, an M.S. from Northeast Agricultural University, and a B.S. from Hunan Agricultural University.

He actively serves on committees such as the International Commission on Microbiological Specifications for Foods (ICMSF) and editorial boards, including the Journal of Food Protection.
His publications highlight advancements in nonthermal processing, antimicrobial peptides, and foodborne pathogen detection. Awards include postdoctoral and doctoral research scholarships from Australian institutions. His community roles include leadership in food safety organizations and industry outreach initiatives.
