Professor Jason Stokes is a faculty member at the University of Queensland's School of Chemical Engineering, where he leads the Premium Food and Beverages Program under Australia's Food and Beverage Accelerator. His research focuses on rheology, tribology, and structure-property relationships in soft matter and food systems. With over two decades of academic and industrial experience, including a decade at Unilever's Corporate Research Laboratory, Stokes applies his expertise to solve challenges in food oral processing, sensory perception, and sustainable food engineering.
His recent publications (2024-2025) explore plant-based meat alternatives, gluten-free food formulations, and salivary lubrication mechanisms, with recurring themes in food texture engineering, tribological methods, and non-Newtonian fluid behavior. Stokes' work bridges industrial applications with fundamental soft matter physics, addressing both academic and commercial food science challenges.
As an educator, Stokes coordinates and lectures Transport Phenomenon (CHEE4009) and Engineering Placement (ENGG7292) courses. He previously held leadership roles including Deputy Associate Dean Research (2020-23) and Director of Research at the School of Chemical Engineering.
