Jacob Kirkensgaard is an Associate Professor at the University of Copenhagen, heading the research group Structural Food Physics and Soft Matter Self-Assembly jointly anchored between the Department of Food Science and the Niels Bohr Institute, with affiliation to the Nano-Science Center. He specializes in experimental execution and advanced data analysis for x-ray and neutron small-angle scattering (SAXS/WAXS). The group hosts cutting-edge equipment, including a Xenocs Nano-Inxider combined SAXS/WAXS setup and a Ganesha instrument for in situ studies, while Kirkensgaard serves as the UCph branch manager for the Danish LINX initiative and a LINXS Fellow.
