Isaac Pérez Borda

Isaac Pérez Borda is a Research Fellow at the University of Gastronomic Sciences (UNISG) in Pollenzo, Italy. They are currently involved in the 'STAPLES' project, analyzing strategies to mitigate cereal supply crises in North Africa and forecasting future crises. Previously, they contributed to the Sustainability and Circular Economy Lab, mapping Piedmontese food supply chains for the Italian Ministry for Environment.

Education: Master’s in Food Innovation and Management from UNISG, with a thesis titled "A taste of/for sustainability: an alternative for relating to food and each other", critiquing food sustainability discourse and proposing ecological and hospitality-based alternatives.

Research Focus: Combines environmental studies with food justice, security, and circular economy applications. Recent work includes circular economy synergies in Piedmont and historical analyses of food supply resilience in North Africa.

Labs/Teams: Part of UNISG’s Sustainability and Circular Economy Lab, collaborating on regional food system optimization projects.
