Ida-Johanne Jensen is Associate Professor at the Department of Biotechnology and Food Science, Faculty of Natural Sciences, Norwegian University of Science and Technology (NTNU). Her work integrates food science, marine biotechnology and sustainability to valorise marine resources, improve food quality and develop novel functional products.
Education & Doctoral Training
Dr Jensen obtained her PhD from UiT The Arctic University of Norway (UiT Norges arktiske universitet) in 2014 with the dissertation "Health benefits of seafood consumption – with special focus on household preparations and bioactivity in animal models", laying the foundation for her expertise in seafood bioactivity and nutrition.
