Stephensen, Ph.D., is the Director of the USDA ARS Western Human Nutrition Research Center (WHNRC) and an Adjunct Professor in the Department of Nutrition at the University of California, Davis. His research focuses on the interplay between nutritional status, immune function, and chronic diseases, particularly vitamin A, D, and omega-3 fatty acids. He holds a B.S. in Biochemistry from UC Davis, an M.S. in Human Nutrition from Cornell University, and a Ph.D. in Immunology and Infectious Diseases from Johns Hopkins University.
Key research interests include the role of diet in modulating the gut microbiome, vitamin deficiencies in immunocompromised populations (e.g., HIV/AIDS patients), and the effects of antiretroviral therapies on bone health.
