Carolyn Slupsky is a Professor in the Department of Food Science and Technology at the University of California, Davis, within the College of Agricultural and Environmental Sciences. She holds the Kinsella Endowed Chair in Food, Nutrition, and Health and has been recognized with multiple awards, including the Chancellor’s Fellow and accelerated promotions, underscoring her academic excellence and leadership.
Her research focuses on metabolomics, nutrition, and the gut microbiome, with applications in infant health, human milk research, and citrus disease. She utilizes advanced NMR and mass spectrometry techniques to investigate metabolic responses to diet and disease, bridging human and plant systems.
Dr. Slupsky's work reveals critical insights into how early nutrition shapes infant metabolism and microbiota, and how metabolomic profiling can detect diseases like Huanglongbing in citrus. Her publications span top journals in nutrition, microbiology, and analytical science, and she has delivered numerous international presentations.
The trends in her recent articles highlight a strong focus on infant feeding, human milk composition, gut microbiome interactions, and plant-pathogen metabolomics. Her research integrates clinical, animal, and agricultural models to advance translational science.
- Kinsella Endowed Chair in Food, Nutrition, and Health (2016)
- Chancellor’s Fellow (2015)
- Accelerated promotion to Professor (2015)
- Dean’s Team Award for Multidisciplinary Research (2014)
- Bill & Melinda Gates Foundation Grant (2012)
She actively mentors students and leads collaborative research, advising on gut microbiome dynamics, metabolic phenotyping, and early detection technologies. Her work is supported by federal and foundation grants, with ongoing projects in nutritional interventions, microbiome modulation, and agricultural diagnostics. She leads or contributes to teams focused on metabolomics infrastructure and multi-omics integration.
Dr. Slupsky is a key member of the West Coast Metabolomics Center and collaborates widely across UC Davis and internationally. Her lab develops and applies metabolomic tools for health assessment in both humans and plants, emphasizing innovation and impact.
