Bruno Xavier is an Associate Director of the Cornell Food Venture Center and Senior Extension Associate in Food Science at Cornell University's College of Agriculture and Life Sciences. He holds a Ph.D. in Microbiology from Cornell (2008) and leads regulatory and safety initiatives for food product development. His work supports over 2000 companies annually through process authority documentation and compliance guidance. Previously, he served as a post-doctoral associate at Cornell's Milk Quality Improvement Program and as a professor of Biotechnology and Industrial Microbiology at Brazil’s Federal University of São João del-Rei.
Research interests focus on food safety engineering, fermentation innovations, and entrepreneurship in food systems. He co-founded the Fermentation Farming Lab at Cornell AgriTech, advancing microbial applications for food production systems. His extension programs bridge academic research with industry needs through hands-on workshops and regulatory training for food entrepreneurs.
Key roles include managing the Cornell Food Venture Center's technical support network and advising the New York State Center of Excellence in Food and Agriculture. Collaborations include developing startup accelerators for bone health products and food safety technologies. His work emphasizes practical solutions for small-to-medium food businesses navigating regulatory landscapes.
