Arzu Durukan is a Researcher at Yeditepe University's Faculty of Fine Arts, affiliated with the Department of Gastronomy and Culinary Arts. She holds a PhD in Anthropology (2013) and a Master’s in Food Engineering (1991), both from Yeditepe and Middle East Technical University respectively.

Research Interests encompass Gastronomy, Cultural Anthropology, Migration Studies, and Nutrition, focusing on how food habits evolve with cultural shifts, migration, and societal norms. Her work bridges food science with social sciences, emphasizing identity and sustainability.
Academic Contributions include 15+ publications and supervision of 20+ theses across nutrition, culinary culture, and migration impact. She has taught courses like Food History, World Cuisines, and Graduation Projects since 2018.
