Ana María Vivar Quintana is an Associate Professor in the Department of Construction and Agronomy at the University of Salamanca, affiliated with the Polytechnic School of Zamora. She belongs to the GAPEC research group (Food: Production, Processing and Characterization) and holds 4 research sexenios and 4 teaching quinquenios. She received the Award for Teaching Excellence Trajectory in 2019-2020.
Her primary research focuses on Food Technology, particularly applying Near Infrared Spectroscopy (NIR) for food quality assessment in products like Iberian pork, lentils, and cheeses. She also researches educational innovation in engineering, developing augmented reality tools for laboratory safety and active learning methodologies.
She leads/participates in numerous research projects including the EU Horizon 2020 project 'mEATquality' on sustainable meat production, and regional projects on food characterization and sensory analysis. Her technology transfer includes industry collaborations on food fraud detection and protein texturization.
