Dr. Christine Bosch is an Associate Professor in Nutrition at the School of Food Science and Nutrition, University of Leeds. Her research focuses on diet and health, particularly the role of dietary antioxidants and plant metabolites in preventing diseases like obesity, diabetes, and cardiovascular conditions. She investigates how compounds such as flavonoids and betalains modulate oxidative stress and inflammation pathways, with applications in functional foods and molecular nutrition. Her current projects include the CruSHH initiative exploring crustacean-derived proteins for heart health and the NAPIC center for alternative protein innovation. She also leads the SNAPP project on sustainable nutrition for animal protein systems. Her work integrates molecular methods to study gene-nutrient interactions and trace element metabolism. Dr. Bosch has published extensively on topics like betacyanin bioactivity, gut microbiota modulation via beetroot, and the anti-inflammatory effects of plant extracts. Her research emphasizes translational outcomes, aiming to bridge fundamental science with public health applications. She supervises postgraduate students and directs research training programs within the Faculty of Environment.
