Professor
Prof. Dr. Sevcan Ünlütürk is a faculty member in the Department of Food Engineering at Izmir Institute of Technology since 2017. She specializes in non-thermal food processing, UV system modeling, rheological behavior of food materials, and AI applications in food processing. Her research also encompasses food waste valorization, biocrystallization, and image processing for food quality assessment. Education : PhD and MSc in Chemical Engineering from Illinois Institute of Technology (IIT), Chicago, USA; BSc in Food Engineering from Ege University, Turkey. Work Experience : Progressed from Research Assistant to Professor at Izmir Institute of Technology (2003–2017); Teaching Assistant at IIT (1999–2002); Intern at City of Chicago Department of Water (2001). Her research focuses on innovative food technologies, mathematical modeling of UV reactors, and sustainable processing. Recent projects include AI-driven optimization of food drying processes and biocrystallization for quality evaluation. She has supervised numerous MSc and PhD theses on topics like UV-LED pasteurization, microwave drying kinetics, and Bokashi compost applications in agriculture. Honors/Awards : 1st place in Food Engineering Department (Ege University, 1992) Higher Education Council (YÖK) Graduate Education Scholarship (1993–2002) 3rd place in International Food R&D Brokerage Event (2012) 2nd place in Undergraduate Graduation Poster Competition (2022) She advises BSc, MSc, and PhD students on projects such as statistical optimization of drying processes, dose uniformity in UV-C treatment, and development of low-sugar food products. Her research group explores food system digitalization and mathematical modeling of food processing systems.
