Professor
Esra Çapanoğlu Güven serves as Professor in the Department of Food Engineering at Istanbul Technical University, Turkey. With an h-index of 63 and over 16,000 citations, she is a globally recognized researcher in food science specializing in polyphenol chemistry, antioxidant mechanisms, and bioaccessibility studies. Her work bridges food engineering principles with nutritional health outcomes. Her research program investigates bioactive compounds across diverse food matrices, particularly focusing on Turkish agricultural products like black carrot, mulberry, and olive by-products. Key themes include processing-induced changes in phenolic compounds, in vitro digestion modeling, and sustainable valorization of food waste streams. Recent work demonstrates strong emphasis on functional food development from agricultural residues and alternative protein sources. Analysis of her 2025 publications reveals dominant trends in sustainable food systems (73%), bioactive compound delivery mechanisms (68%), and emerging food technologies (61%). Her work increasingly integrates multi-omics approaches with traditional food chemistry, particularly in gut microbiome interactions with plant metabolites. Professor Güven's scientific accolades include: Georg Forster Award (2022) Highly Cited Researcher designation (2023) Outstanding Contribution Award (2021) Multiple TÜBİTAK Yayın Teşvik awards (2015) She has supervised 54 graduate students and secured 31 research projects totaling over 15 million TRY in funding. Current projects focus on microencapsulation of polyphenols from red onion waste, sustainable film development from fig by-products, and microbial resource utilization for healthier Mediterranean diets. Her laboratory actively collaborates with European research teams through Horizon Europe initiatives.
