Vincent Rioux is a teacher-researcher in biochemistry and human nutrition at The Agro Rennes-Angers Institute, affiliated with the Department of Animal Production, Agrifood, Nutrition (P3AN). His teaching responsibilities include structural and metabolic biochemistry courses in the food engineering curriculum, as well as modules on protein purification and human nutrition. His research focuses on lipid metabolism, biological roles of lipids, and nutrition/health relationships in humans and animals, conducted within the UMR NUMECAN (Nutrition, Metabolism and Cancer) research unit.
