Simon Williams

Dr. Simon Williams serves as an Adjunct Fellow in the School of Science within the Faculty of Science and Engineering at Southern Cross University and as a Postdoctoral Research Fellow at Southern Cross Plant Science. His research focuses on chemical analysis of natural products, particularly Australian coffee and Leptospermum honey.

His parallel research on Leptospermum honey examines production methods and bioactive properties, contributing to natural products chemistry and agricultural science. This work bridges analytical techniques with real-world applications in food chemistry and sustainable agriculture.

Based at Southern Cross Plant Science in Lismore, New South Wales, he conducts research within university-affiliated laboratories focused on natural product characterization.
