Simon Gregersen is a Tenure Track Assistant Professor at Aalborg University's Department of Chemistry and Bioscience, within The Faculty of Engineering and Science. His research focuses on protein science, food emulsifiers, and sustainable biorefining, leveraging proteomics and bioinformatics. He holds a PhD in Nanobioorganic Chemistry (2014) and advanced degrees in Nanobiotechnology from the University of Copenhagen and Aalborg University.
Research Interests:
- Development of bioactive peptides from underutilized biomass (e.g., seaweed, grass, potato)
- Protein valorization through enzymatic hydrolysis and membrane filtration
- Application of mass spectrometry and deep learning in proteomics
