About
Sabrina Geißlitz is a Senior Postdoc in the Research Group Food Biopolymer Chemistry at the Leibniz-Institute for Food Systems Biology at Technische Universität München (TUM), Germany. She previously held a Junior Postdoc position at the Karlsruhe Institute of Technology (KIT) from 2020–2024. Her academic foundation includes a PhD in Natural Sciences from TUM (2019) and Research Fellow status at Leibniz-Institute for Food Systems Biology from 2015–2019.
Research Interests
- Structure-functionality-activity relationships in plant proteins (particularly cereals)
- Impact of genetic/environmental variability on protein composition for sustainability and end-use quality
- Proteomics methodologies (targeted and untargeted) for plant protein quantitation
- Abiotic/biotic stress effects on proteins linked to wheat-related disorders
- Interdisciplinary integration of food chemistry, immunology, and mass spectrometry
- Development of analytical strategies for studying food protein functionality
Publication Trends: Her recent articles focus on wheat protein analysis via LC-MS/MS, amylase/trypsin inhibitors, and proteomic responses to stressors, with keywords spanning proteomics, analytical chemistry, and plant biology. Subfields highlight cereal-specific research, stress effects, and methodological innovations in mass spectrometry.
