Nancy Engelmann Moran

Nancy E. Moran is an Associate Professor at Baylor College of Medicine, with dual appointments in Pediatrics and Nutrition. She leads the Carotenoids and Nutrition Laboratory at the USDA/ARS Children's Nutrition Research Center, focusing on dietary carotenoids' impact on maternal, infant, and adult health.

• Education: BS and PhD in Nutritional Sciences from the University of Illinois; Postdoctoral Fellowship in Nutritional Biochemistry at Ohio State University.

Her research spans carotenoid metabolism, nutritional pharmacokinetics, and genetic determinants of dietary response. Current projects include NIH/NICHD and USDA/ARS funded studies on non-invasive biomarkers for infant carotenoid intake and maternal-infant health interactions.

Recent publications highlight reflection spectroscopy applications for dietary assessment, carotenoid transport mechanisms, and genetic variability in nutrient absorption. Collaborations span institutions like East Carolina University and the University of Minnesota.

Laboratory members include postdoctoral associates, medical students, and research coordinators. The lab actively recruits postdoctoral fellows through the CNRC Fellowship program and trains undergraduates via the SMART Program.
