Matthew K. Taylor

Matthew K. Taylor, Ph.D., RD, LD, is an Associate Professor in the Department of Dietetics and Nutrition at the University of Kansas Medical Center's School of Health Professions. He joined the faculty in September 2019 and serves as an instructor for the course DN 818 Seminar in Dietetics and Nutrition II in the master's degree program.

His research focuses on nutrition's role in brain aging and Alzheimer’s disease, employing dietary interventions and nutritional epidemiology with biomarker analysis (e.g., imaging, blood, microbiome) to develop evidence-based nutritional guidance. Current projects examine high glycemic diets' impact on Alzheimer’s risk and ketogenic diet applications for neurological conditions.
