Maria Rosa Perez Gregorio

Maria Rosa Perez Gregorio is a Researcher at the University of Vigo, affiliated with the College of Sciences and the Department of Analytical and Food Chemistry. She is associated with the Institute of Agroecology and Food and operates on the Ourense campus.

Her research focuses on the effects of post-harvest processes on food compounds, particularly flavonoids in onions, and extends to Food and Health Omics within the F&Homics research group. She holds a Ph.D. in Nutrition and Bromatology.
