Maria Piochi is an Assistant Professor at the University of Gastronomic Sciences (UNISG) in Italy, based at the Pollenzo Campus. She holds a Master’s Degree in Food Sciences and Oenology (2012) and a PhD in Sustainable Management of Agricultural, Forest and Food Resources (2018), both from the University of Florence. Her work focuses on sensory perception mechanisms, food technologies, and individual variability in taste responsiveness.
She teaches Food Science and Technology in UNISG’s programs, including the Graduate Degree in Food Innovation & Management and Undergraduate Degree in Gastronomic Sciences and Cultures. Her research projects include ValorVitis 2.0, DIGI GASE, and Feast, exploring innovation in food systems and sensory analysis.
Awarded SISS Young Researchers Awards (2013, 2016), she collaborates with companies like Lavazza and Pernigotti. She is a member of SISS, E3S (Taste Responsiveness WG), and SISTAL. She also serves on UNISG’s Ethics Committee.
