Mandy Hughes is a Senior Lecturer in the Faculty of Education at Southern Cross University. Her work focuses on social justice, refugee studies, and creative research methods. She holds a PhD from Southern Cross University (2017) and prior degrees from Australian National University and University of Canberra.

Her research explores sociocultural roles of food among refugee communities, social inequalities, and international development. She has collaborated with Anglicare North Coast and serves on the Multicultural NSW Regional Advisory Council since 2016.
Awards include the Vice Chancellor’s Impact Award (2019) and Anglicare National Award (2021). She coordinates the Social Science course and teaches sociology, recognized for her teaching excellence.
