Judy Lester, MS, RDN, CSG, LDN, is an Adjunct Faculty member at the UNC Gillings School of Global Public Health, teaching NUTR 760: Food Science and Culinary Arts. She serves as an outpatient clinical dietitian at UNC Health Care in Chapel Hill, focusing on high-risk pregnancies, nephrology, and pre-/post-renal transplant nutrition. Her professional experience includes roles at Chatham Hospital, WakeBrook, and UNC Hospitals Hillsborough Campus.
