Jill Craig serves as an Adjunct Professor at the Nutrition Institute within the College of Health Sciences at the University of Bridgeport. She is a Certified Nutrition Specialist (CNS) and holds dual licensure as a Dietitian Nutritionist in Connecticut (since 2020) and Ohio (achieved February 2024 as one of the state's first two licensed CNS professionals).

She currently works as a clinical educator for Mosaic Diagnostics (formerly Great Plains Laboratory), training healthcare practitioners in diagnostic approaches for uncovering underlying causes of patient symptoms through nutritional science.
