Dr. Jessica Cooperstone is an Associate Professor with joint appointments in Food Science & Technology and Horticulture & Crop Science at Ohio State University's College of Food, Agricultural, and Environmental Sciences. She earned her B.S. in Food Science from Cornell University and Ph.D. from Ohio State. Her research uses metabolomics and analytical chemistry to identify health-promoting compounds in plants, particularly tomatoes, and evaluate their effects using preclinical and human models.
Her laboratory focuses on the absorption, metabolism, and health impacts of steroidal alkaloids and carotenoids from tomatoes. Current projects investigate pharmacokinetics of tomato bioactives, crop biofortification strategies, and synergistic effects between plant compounds. She employs advanced mass spectrometry techniques for comprehensive metabolite profiling in plants, foods, and biological samples.
