Grace Adegoye is an Assistant Professor of Nutrition and Program Coordinator at Western Colorado University's Recreation, Exercise & Sport Science Department. She holds a PhD in Nutrition from Mississippi State University (2022), an MEH in Environmental Health from Mississippi Valley State University (2018), a Diploma in Education from the University of Ibadan (2014), and an HND in Environmental Health from the College of Health Science and Technology (2007). Her research examines the CHAIN framework (Climate, Health, Agriculture, Improved Nutrition).
Adegoye's work integrates environmental health and nutrition science, focusing on climate impacts on food systems, sustainable food processing, and community nutrition interventions. She developed educational materials for small-scale fish processors in Nigeria through a USAID-funded project and has studied climate stress effects on crops through USDA-supported research.
