Geraldine Riouff is an Instructor in the Environmental Health Sciences Department at Western Carolina University (WCU), affiliated with the School of Health Sciences within the College of Health and Human Sciences. She holds a Bachelor of Environmental Health Science and a Master of Project Management, both from WCU. Her research focuses on qualitative methods in teaching and learning within Environmental Health practice, emphasizing practical skills relevant to current industry needs.
Dr. Riouff’s expertise spans Food Sanitation, Residential Environments, and Public Health. She teaches core courses such as ENVH 230: Intro to Environmental Health, ENVH 330/331: Food Protection and Sanitation, and ENVH 320: Institutional and Residential Environments, fostering collaborative, discussion-based learning. Prior to academia, she spent 17 years in environmental health practice, including roles at the Jackson County NC Health Department in Food Safety and Onsite Water Protection.
